We are saddened by the news of the passing of master pastry chef Gaston Lenotre, who became known as "one of the greatest masters of taste".

As a young boy, Marc Demarquette was treated to fine Lenotre patisseries when visiting his grandmother, who was a frequent and loyal customer of Monsieur Lenotre at his first pastry shop in Normandy. Inspired by his talent, passion, creativity and rejection of mass production methods, Marc trained at the prestigious Maison Lenotre, where he was honoured to personally meet the master patissier.

"Gaston Lenotre was a true professional demanding only the highest standards. It is a great honour to have met and learned my craft from such a true master. He taught me never to compromise on quality, strive for perfection and to pass on the knowledge and skills of artisan craftsmanship to future generations. He will be truly missed, but his inspiration lives on."
