We are proud to be introducing this very special chocolate to the UK.

Catongo cocoa is a genetic variant of the Forastero bean and is found mainly in southern Bahia, Brazil. It is often identified as a Porcelana because of its whitish-coloured seeds.  However, when comparing the pods of the Catongo and those of other Forastero and Criollo types, the Catongo is virtually a mirror image of the Criollo-Porcelana. This is particularly due to two major factors: the number of divisions in the pod (five) and its downside shape.

The pods are harvested and processed on site in Brazil by our partners, Amma, who ensure that all of the precious cocoa butter is retained, thus maintaining exactly balanced proportions as nature intended.
The processed chocolate deceivingly resembles milk chocolate in appearance, but at 75% strength it palates a serious punch of fresh berries with an underlying acidity that would make any raspberry jealous!

We create our Catongo ganache using fresh cream, butter and Brazilian honey. This results in a very smooth and delicate texture which tantalisingly contrasts with the unique and stimulating flavours and aromas of the Catongo.
